WoodWind House Ricotta
A very easy and accessible fresh cheese to make at home and will always make you look like a kitchen-savvy home cook. Fresh ricotta is great served with bread or fruits in the morning, and is an excellent finish to a simple pasta.
INGREDIENTS
2 cups heavy cream
2 cups buttermilk
1 cup whole milk
1 cup half and half
1/2 cup lemon juice
TOOLS
12 quart pot
Cheesecloth
1 large bowl
1 large sieve
Serves 4 people
PREP TIME 45 minutes
COOK TIME 10 minutes
1. Pour heavy cream, buttermilk, half and half, and whole milk into the pot. Bring mixture to a simmer.
2. Add lemon juice.
3. Let simmer for 3 to 5 minutes.
4. Strain over the bowl and sieve lined with cheesecloth.
5. Place strained mixture in fridge to chill for 30 minutes.
