Bread Pudding with Bourbon Sauce
If you’ve ever met Chef Matt, you know that he loves a good whiskey. Bourbon, a really old Scotch, a classic Rye - he has an appreciation for them all. That’s why it’s no surprise that his favorite twist on a classic bread pudding is a little bourbon sauce to spice things up. Make it yourself for the whiskey lover in your life!
INGREDIENTS
3 loaves of brioche bread, diced
1 quart cream
2 quarts milk
1 cup Breckenridge Colorado bourbon
2 cups sugar
2 cups dark chocolate chips
4 tablespoons vanilla extract
10 whole eggs
10 egg yolks
BOURBON SAUCE
1 pound butter
1 cup sugar
1 cup Breckenridge bourbon
1 tablespoon vanilla extract
1 cup corn syrup
1. Mix all wet ingredients
2. Add to the bread
3. Mix slowly
4. Cover with plastic wrap and aluminum as well
5. Cook for 1hrs 300 F cover
6. Cooked for 20 more minutes uncovered
7. Cool down
8. Cut 24 pc
Bourbon Sauce
Boil all ingredients together and drizzle on top
